DK64 isn't terrible, but it's probably the worst of Rare's N64 platformers and one of the least good DK games in general. It's full of repetitive busywork (switching Kongs to hit switches, etc.) and the combat is especially bad. A lot of the time, enemies feel like they're not even there. You can tear through them like tissue paper. Enemies weren't Rare's strong point in the N64 years, but at least the ones in Banjo-Kazooie and Tooie felt solid, and smacking them was satisfying. The only thing I really love about DK64 is the music.
I'm all for a remake that really polishes the game, but I'm not exactly clamoring for another 3D DK. At least not until Retro Studios gets to finish their trilogy, especially since they've said they want to include more animal buddies in their next DK game (Enguarde, anyone?), and now that King K. Rool is back, I'd love to see their take on him too.
