-Pokey Minch (The Pig King) (although not exactly a pig, but you get the idea)

-Chris P. Bacon
-The Pigs in Nut & Bolts
-Wizpig
-If I remember right, one of the Pinatas resembles a pig

I wouldn't count the Pokemon against Nintendo. They're so many that there are bound to be a number or pig-based ones.

pigs are common animals, even as little kids we would learn things like the cow says "moo" and the pig says "oink"
there isn't too much special about the pig, but that seems to shout "grunt' to all these videogame developers

and besides, pokemon and animal crossing have all sorts of different animals, so it is no wonder pigs were selected

In the "Zero to Hero" microgame in the original WarioWare for GBA, if you press A when the gauge is not in the red, the character transforms into a pig.

And also, one of the hazards you have to jump over in Wario Land 4's "The Wario Hop" is a pig. Oh and there's an enemy called Hoggus in the Doodle Woods level.
